What you’ll need:

  • 2 Granny Smith apples, peeled and cubed
  • Almond parfait1 ½ cup water
  • 1 tsp. cinnamon
  • 2 tsp honey
  • 1 ½ cup natural yoghurt (can be substituted for coconut milk yoghurt)
  • 2 tbsp almond butter
  • 2 tbsp chia seeds
  • 2 tbsp sliced almonds
  • 2 tbsp linseeds
  • 1 tbsp honey

What to do:

  1. In a small pot combine the apples, water, cinnamon and honey. Cook uncovered over medium-high heat, stirring occasionally, until it comes to a boil. Reduce heat to medium-low and cook for another 20 minutes until the compote forms.
  2. Meanwhile, in a small bowl, combine yoghurt and almond butter and mix well.
  3. Layer in mason jars with compote, yoghurt mixture, chia and linseeds. Repeat once.
  4. Dress with a sprinkle of slivered almonds and honey.
