I found this recipe on The Wellness Warrior by Bannie Williams. I whipped it up and it was mouth watering!

What you’ll need:

For the Base

  • 1 tablespoon melted organic coconut oilCoconut & Banana Pie
  • 1/3 cup shredded organic coconut
  • 1/2 cup organic macadamia nuts
  • Approx. 2 cups organic medjool dates, pitted

For the Filling

  • 4 large ripe organic bananas
  • 2/3 large tin of organic coconut cream
  • 1 tsp organic vanilla essence
  • 1 pinch sea salt
  • 4 organic medjool dates pitted
  • 2 tablespoons organic shredded coconut

What to do:

  1.  To make the base, blend the macadamia nuts until chunky in a food processor or blender.
  2. Add the remaining base ingredients and keep blitzing until combined. The mixture should be a thick and dense consistency.
  3. Press the mixture into a large tart/ tin, creating a smooth, even base. Place in the fridge to set for 2-3 hours.
  4. Once the base is set create the filling by blending all ingredients until a smooth, thick consistency forms.
  5. Taste the mixture. You may need to add more of the ingredients to get the balance of coconut and banana right. Once you’re happy with the taste pour the filling into the base. Place in the fridge to set for at least 3 hours.
  6. Top with a sprinkling of extra shredded coconut and serve.
