I found this delicious recipe in a book called “Grain Brain”

What you’ll need:

  • 1 onion, chopped
  • 1 tomato, chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 eggs, beaten
  • 1 tbs coconut oil
  • 1/4 avocado, sliced
  • 2 tbs salsa

What to do:

  1. Add the onion, tomato, salt and pepper to the beaten eggs in a bowl and mix
  2. Add the coconut oil to a skillet and heat over medium-high heat
  3. Once hot, add the eggs mixture and cook until the eggs begin to set (approx. 2 minutes)
  4. Flip the omelette with a spatula and cook until the eggs are no longer runny (about 1 more minute)
  5. Fold the omelette in half and continue to cook, if the omelette is not yet slightly brown
  6. Transfer to a plate, and serve hot with sliced avocado and salsa on top.
